Lemon Cookies with Lemon Icing

I made these cookies about a month ago and the recipe and pics are finally up. At first I was looking for a cookie that would compliment my lavender food oil and what goes better with lavender than lemon?

My idea was to make the icing lavender  but after paying with 2 batches of icing, and still can’t get the bitterness down, I ended up using a small drop just so it smells like lavender, but still taste like a lemon icing.

The only thing I changed is the lemon icing… 

For the lemon icing:

  • 1 cup confectioners’ sugar, sifted
  • 1 ½ – 2 Tbsp. freshly squeezed juice
  • 1 drop lavender food oil (I used LorAnn Oils in Lavender)
  • 1 toothpick dip worth of Purple gel food colouring

The cookies are nice, fluffy, and a bit on the cakey side. Just the way they should be 🙂
